One-Pot Beef Taco Rice#

- 1 onion, diced
- 1 lbs lean beef mince
- 1 packet taco seasoning
- 2 beef stock cubes dissolved in 750ml boiling water
- 1 cup jasmine rice (dry weight)
- 30g tomato purée
- 60g light cheese, shredded
Directions#
Cooking Method#
- In a large pot or skillet, add the diced onion and sauté until softened.
- Add the lean beef mince and taco seasoning. Cook until the beef is browned.
- Pour in the beef stock and stir to combine.
- Add the jasmine rice and tomato purée, mixing well.
- Cover the pot with a lid and let it simmer for 10-12 minutes or until the rice is cooked and the liquid is absorbed.
- Sprinkle shredded light cheese on top and let it melt before serving.
Protips#
- Use jasmine rice for a fragrant touch, but you can substitute with other rice varieties if desired.
- Adjust the amount of taco seasoning to suit your taste preference.
- For extra flavor, add some chopped bell peppers or corn along with the onions.
- Garnish with fresh cilantro or a dollop of sour cream for added freshness.
