Homemade Beef Ramen Stir Fry

Ingredients
Main Ingredients
- 1 boneless (225g) ribeye, thinly sliced
- 3 packets (390g) Shin Black Ramen (use 3 noodles and 2-3 seasoning packets, reserve 1/4 cup ramen cooking water)
- 1 (225g) yellow onion, thinly sliced
- 4 cloves garlic, thinly sliced
- 1-inch knob ginger, finely chopped
- 2 red Fresno chilies, finely chopped (can use jalapenos)
- 3 Tbsp (42g) vegetable oil
- 1 Tbsp (15ml) mirin
- 1 Tbsp (15ml) sweet soy sauce
- Soy sauce, to taste
- Green onion, thinly sliced for garnish

Cooking Method
Prepare Noodles
- Cook ramen noodles in boiling water according to package directions. Reserve ¼ cup of the hot noodle water, drain the noodles, and set aside.
Sear the Beef
- Heat a wok over high heat. Add 2 Tbsp vegetable oil to coat.
- Season the sliced ribeye with salt, then sear in the hot wok, allowing one side to brown for about 2 minutes. Toss and cook for an additional 1-2 minutes.
- Remove the beef from the wok and set aside.
Sauté Aromatics and Vegetables
- Add 1 Tbsp of oil to the wok. Once hot, add onion, garlic, ginger, and chilies. Season with 1-2 ramen seasoning packets, adjusting to taste.
- Stir fry until the onions are soft, about 2-3 minutes.
Combine and Season
- Return the beef to the wok with the cooked noodles.
- Add mirin, sweet soy sauce, additional ramen seasoning packets as needed, and soy sauce to taste.
- Stir fry everything together, adjusting with reserved ramen water for sauce consistency if needed.
Plate and Serve
- Garnish with green onions and serve hot.
Protips
- For extra flavor, try using fresh ramen or adding a dash of sesame oil.
- Adjust spice levels by adding or reducing chili amounts.
